Omelette for one

Many people find it a chore to cook for one. Usually, for lunch, I will be eating alone as my children all come home at different time and they usually ask for something that suit their taste buds.

I made an omelette today and after a few dashes of pepper and cheese plus a sprig of oregano, it looks yummy enough to show off.

Here’s the recipe. Just omit whatever you do not like, add in whatever you fancy.

2 eggs, beaten and season with some salt and pepper

1 huge tomato, remove seeds and dice

5 button mushroom, slice

2 pips garlic

Olive oil - 1 tablespoon

Method:
Heat oil and stir fry garlic till fragrant. Add in tomato and mushroom. Stir until both are limp. Pour in egg. Fry till slightly brown.

Dish out. Sprinkle with cracked black pepper and some parmesan cheese. The quantity of the vegetable is much more than normal and hence, the omelete does not form like it should.

But it is still yummy. Took it with a kiwi fruit and a mug of coffee, I had a nice lunch for one.

    Lilian, I always wanted to ask, the button mushroom, you open one can and use as and when, issit? Can keep for how long - mushroom in open can in the fridge a?
