Portobello mushroom is this huge, brown, flat mushroom. It is about the size of my palm. Rather costly as one piece is about RM1.50.
Since I was baking potatoes with cheese for my kids, I decided to bake two for myself.
Heat some olive oil and stir fry one yellow onion till soft. Use a bit more oil so that there is enough to oil the baking plate.
I lined the onion on the baking tray. Put in my mushrooms and the potatoes mixed with cream cheese. (the cheese are for my scrawny kids only). I had parboiled the potatoes to make it cook faster.
Sprinkle more mozarella cheese and parmesan.
Bake for 200 deg C for about 15 minutes.
I didn’t cut the mushroom, leaving them whole because mushroom tends to wilt during cooking. It is yummy, as can be seen from the photo.
The portobello has a nice woody and wild taste. It is also chewy, a perfect replacement for the meats I am missing. 🙂

I salute your resolve lah, for lent ni at least. It would be so so so hard for me to try cook vegetarian for us here, sbb we are big carnivores hehehe…

oooo, looks very good. I love portobellos and they are a great meat substitute.
I’d opt for portobello mushrooms rather than meat anytime. Wonder how the name came about? Reminds me of Portobello Market in London.
