Resipi : Nasi Tomato

Normally if I have the urge to cook something, I will do a quick check on the internet for the recipe. I have lots of recipe books which I never bother to refer. Bought them just for keepsake and flipping through to entertain myself.

Today, I suddenly feel like eating tomato rice and know that I have all the ingredients I need at home. So, what I wanted to know is which spice to use? I surfed through a few sites and got them.

Tomato rice calls for tomato soup. Buy the best, Heinz Cream of Tomato. It is the most expensive of all tomato soup but the most yummy. Coconut milk in a carton. Ghee. For ghee, I only need two tablespoons, not the whole tin ya? If you don’t use ghee, substitute with butter.

Other things you need is one onion, half a bulb of garlic, piece of ginger and screwpine leaves or daun pandan. If you don’t like ginger, just smash it. Otherwise, chopped the ginger, onion and garlic.

The spices that make nasi tomato good – 1 piece of cinnamon stick, 1 star anise, two cloves and three cardamons. (cardamon is the orange seed-looking thing)

Resipi for Nasi Tomato

  • 3 cups rice
  • 3 cups water -reduce water if your rice doesn’t need much water
  • 200 mls of coconut milk
  • 1 can of tomato soup
  • Generous dash of tomato ketchup

Wash rice and put all the above into the rice cooker.

Meanwhile…in a pan

  • Heat 2 tablespoon of ghee (minyak sapi) or butter
  • Fry :the spices, screwpine leaves, chopped garlic, onion and ginger
  • When fragrant, put into the rice cooker
  • Add some pepper and salt

Cook rice as you normally cook in a rice cooker. However, stir the rice during the process. Sometimes, the rice will not cook properly. So, keep turning the button to ‘On’ and keep stirring. Leave the rice for a while to absorb the moisture.

Sprinkle some cashew nuts, chopped spring onion, cut red chillies and fried shallots for extra flavour. However, I don’t bother with all that and only added some macadamia nuts (which I happen to have).

If you have eaten your own homecooked tomato rice, I bet you will find those sold outside not as good anymore.
