Recipe : Carrot, walnut butter cake

My 16 years old son organised a hotel suite stay and BBQ party for a few of his friends. However,on the morning itself, he asked if I can help to prepare lunch. I had earlier agreed to season the meats for BBQ as they wanted to buy them ready made. So, I was caught with almost nothing to prepare. But fear not, it is very easy to please a bunch of hungry teens. I baked a walnut cake, make some pasta salad and fried 100 wantans. All within 3 hours.

The photo does not look that great because of the rush of driving up and down to bring the foods to them. However, the taste of the carrot cake is absolutely yummy. I love it so much I ate almost 1/6 of the portion! Hehehe.

Ingredients

  • 1 block butter = 250 gm (best brand SCS or Golden Churn)
  • 230 gm soft brown sugar
  • 4 eggs (find the biggest egg you can find)
  • 250 self-raising flour
  • Juice and rind of one lemon
  • 1 teaspoon cinnamon powder
  • 2 small carrots, grated
  • 1 handful of walnuts, roasted and slightly ground (leave some large chunks if you prefer)

Heat oven to 180 deg C. Line cake tin, size about 8 inches in diameter. In a mixer, beat butter and sugar till white and fluffy. Add in eggs one at a time, alternating with flour. Add vanilla essence, carrots, lemon, cinnamon power and walnut and mix in. Pour into baking tin and bake for about 50 mins.

This will be on my list of Christmas cake to bake.  Do try it, it is real easy.  This is based on my standard butter cake recipe found in my Food Haven  food blog.

    Salute to you lah. I’ll will follow your petua of having the flour and so on nicely weight and organised before big occasion. Save me the stress.
