I have this kiwifruit muffin pre-mix which requires only milk/water, three eggs and corn oil. I bought it from CookingIsland and you can order it online too if you like. It is really and easy way to get a batch of freshly baked muffins within minutes. Even my 4 years old said he knows how to do it because he was observing me dumping all the things inside the mixing bowl and mix with only my egg whisk.
After whisking all that, just add to these little hard cups. Remember to put only half the level because the mix will rise very high after baking. I have seen people putting too much batter until the cake overflows into the oven and at that time, you cannot open the oven. So, it ended up in a blob. Of course, not me. My older sisters. 😛
And within few minutes, I get a batch of 9 big muffins with lots of kiwifruit crunchy seeds. Overall, the taste is not bad, not too sweet and fluffy too. I cheated by using less oil than suggested and instead of corn oil, I replace with olive oil.
My son enjoyed placing those chocolate chips on the top before baking. Well, what matters is he enjoyed himself playing the little baker with me.

I bake at 180 deg. celcius for 20 minutes and left it in the oven for about five minutes. This method will produce a denser texture. If you bake muffins, remember not to bake too long or use too high temperature as it will dry up as muffin use very little oil and a lot of baking powder.
