Lonely meals

Well, I find it a chore to cook for one than for ten. If I am cooking for ten persons, I have this flexibility to be creative and adventurous. It is much easier to cook in bulk than to cook just for one person. So, I am lucky that nowadays, with the kids much grown up, normal cooking means cooking for six persons.

The meal I hate to prepare most is the lunch which I normally eat alone. Usually, my children come back at different time of the afternoon and they usually don’t eat much because school activities mean they will be back after 3 pm. After finding some kid’s food for the four years old, I have to dig the fridge for something to feed myself.

Fried rice is the easiest meal to prepare. I normally chuck in some vegetables, an egg and some chili paste (from bottles) to some leftover rice to make a meal.

The other one is instant noodles. On some days when I have fresh seafoods or meats in the fridge, I just put a couple of pieces with some vegetables. I normally like to store some beans and some mushrooms as they are fast to cook and taste great in instant noodles.

Being a Chinese, I must somehow have either noodles with piping hot soup or spicy rice or it is not considered ‘lunch’. Sandwiches and salads are ‘snacks’ to me.

Even sandwiches filled with ham like the above still cannot ‘fill’ the stomach.

I wonder if readers agree with me? Are you the noodle and rice person or you can make do with bread and pizza all the time?
