I bought a box of Betty Crocker mash potato mix with sour cream and chives. I have forgotten how much but if I remember correctly, it is much more expensive than the regular brand I bought, i.e. Mr. Mash. It is worth the money because the mash potato is delicious! The box instruction is to add milk and butter.
I made a fish pie based on Jamie Oliver fish pie recipe and cover the top with Betty Crocker mash potato. Basically, it is really easy to make fish pie.
What you need are :
Vegetables of your choice, i.e. a mixture of zucchini, carrots, fennel, celery, cauliflower or brocolli. I used a head of fennel.
Onion and garlic .
Saute the onion, garlic and vegetable. If you are using hardier vege, then, cook it a bit. Otherwise, the baking will cook your vegetables. Flavour your vege with some salt and pepper.
HARD BOILED EGGS LAYER
I put three hard boiled eggs and two pieces of cheddar cheese.
Then, you can either top your pie with fish fillets or chicken. I used tenggiri cubes. If you are using meats, I suggest you pre-cook the meat to ensure fasting baking. I season my fish with some mustard and salt. After you added all these layers, put in a cup of milk.
After you have put the meat, cover the top with a layer of mashed potato and parmesan cheese. Bake for 180 deg celcius for about 20 minutes until the top is golden brown. I suggest pre-cooking your meats first to cut down baking time. Otherwise, you may need to bake as long as 40 minutes.
If you note, I didn’t bother to give a very detailed recipe. You actually don’t need any detailed recipe because you just need to dump whatever you can get your hands on and bake it. The layer of potato and milk in the mixture of vegetable, eggs and meat will produce a very tasty dish. The potato sort of seal the eggs, vegetables and meat and allow them to cook gently in the milk.
