A quick chicken pie recipe
I used to have visions of a woman, sweating in the kitchen, rolling pin in hands and hair all frayed. The face covered with flour and the sleeves rolled up. Apron all messed and kitchen looking like a war zone. That’s the kind of vision when you mention baking a pie. But after watching so many Jamie Oliver and other male chefs shows, I have a totally new idea of making this thing call pie.
I made one by just cooking a pot of chicken stew, dump them into the Pyrex and slap on pieces of pre-made, frozen puff pastry which I bought from the supermarket (Kawan brand is not bad, much cheaper than imported Pampas brand).
Then, I rub on some beaten eggs and sprinkle parmesan cheese on it and bake. Voila! I got the most delicious pie.
Here are the general idea how to do it :
Thaw some pre-made, frozen puff pastry. It comes in sheets, so no work is needed.
Season 6 chicken drumsticks with dijon mustard, fresh herbs (thyme,oregano,sage or etc), brandy (optional) and salt and pepper.
Chop one large onions and half a bulb of garlic.
Use any mixture of vegetables like potatoes, carrots, celery, zucchini or etc. (i used canned button mushroom, celery and potatoes)
Method :
Heat some butter, stir fry onion and garlic till fragrant. Add chicken pieces to brown. Add vegetables and a little water to simmer. Simmer till cook. Check the chicken that there are no more blood when you prick it.
Once the chicken is cooked, put them into a baking dish. Add some cheese and cream if you prefer a creamier pie. Ensure that there are not too much liquid/gravy. Cover the dish with the puff pastry. Just slap them on without worrying about the appearance. It tastes good, even if it doesn’t look good.
Bake in 200 deg. celcius for about 20-30 minutes.
Serves hot. It is a beautiful looking dish and taste very, very yummy when it is fresh out of the oven. The puff pastry with the egg glaze and parmesan are so delicious. The chicken stew smells great after being baked, covered in the puff pastry. It makes a wholesome meal because there are meat, carbo and vegetables in one dish.
The cost of this dish is maybe around RM 12 only because the 6 pieces of chicken thighs only costs RM7. I have several recipes using this same method of cooking the dish, cover it with puff pastry and bake.
Although real chicken pies sold by the bakeries are much tastier, do you notice how much oil is oozing from the aluminium foil pie casing? So, baking this at home is a lot more healthier and cheaper too.

Just a suggestion to make it creamy without using cream – you can add sugar-free soya milk to it
