Herb focaccia and smoked salmon (Penang food bloggers potluck)

When I was in Genoa, Italy, I have seen, eaten and smelt enough focaccia to last me a lifetime. I never really like focaccia because it is neither a pizza nor a bread. I just don’t get it why the Italians dig focaccia so much. There was this shop in Genoa which I passed by everyday and it was always packed with people waiting for the fresh batch of focaccia to come out of the oven. Still puzzle why people like focaccia. Feel free to say I am nothing but an uncouth, kampung girl.

Anyway, I actually intend to bake a wholemeal bread today but I changed my mind and instead made focaccia. I made the dough with :

One and half cup lukewarm water
3/4 tablespoons yeast
3/4 tablespoons salt
Two cups white bread flour
One cup wholemeal flour

Mix all. Knead. Leave to prove until double in size. Punch out air. Shape and leave to prove the second time.

To make the focaccia, I spread the dough into very thin layer in my baking pan measuring 15″ x 12″.

For the focaccia, I soaked one chopped garlic, tiny bunch of basil and oregano in olive oil.

When the focaccia has proven the second time, I pressed them to make tiny indents with my finger. Then, I spread the layer of olive oil infused with herbs and garlic. Sprinkle some parmesan cheese.

Bake at 220 degree celcius for 15-20 minutes.

I am going to serve the focaccia with smoked salmon and cream cheese. It will be my dish for the Penang bloggers potluck tonight.

The focaccia has turned out quite ok, more like pizza than bread. Hehehe, probably I had spread the dough too thin.

    PTP – Aiyar…so sayang none of the PTPs can make it lah, the foods all so nice. We cannot finish eating without the Tua Puis.
