Easy as 123, sinfully rich chocolate cupcakes recipe

My son has baked this chocolate cupcakes twice because his little brothers all loved the cupcakes so much. It is from a cupcake recipe book I bought from MPH. The title is just Cupcakes.

I am going to double the quantity from the recipe book because I find it easier to bake cakes in bigger batches.

Here goes the recipe :

WARM MOLTEN CHOCOLATE CUPCAKES

Dump into a mixing bowl the followings :

110 grams butter
100 grams caster sugar
2 eggs
170 grams self-raising flour
2 tablespoon coco powder (the bitter Van Houten one?)

Just beat all the above until well mixed and smooth.

Note that there is no fussy steps, just one big bowl with all the ingredients.

Next, get about 12 tiny squares of chocolate. (does not matter whether it is cooking chocolate or normal chocolate)

Line the cupcake tins with paper cups. Put a bit of the cake batter (which is rather hard/thick), stuff one piece of chocolate in the middle. Top with more batter to cover the piece of chocolate.

Bake at 190 deg celcius for about 20 minutes.

BEWARE OF MELTING CHOCOLATE. IT IS HOT, HOT, HOT AND MAY BURN YOUR TONGUE. Make sure you do not let little kids eat the cupcake when it is still hot.

The cupcake texture is not very fluffy since there is no ‘cream sugar with butter yadda yadda’ step. However, with the molten chocolate, it is very tasty. I only took a few bites because I find it too rich for me. Sinfully rich.

    I’m new to your website but I find myself eagerly reading every one of your blogs. I love your simple easy to make recipes. I’m very new in baking and you somehow make baking and cooking looks soo easy that I can’t wait to try those recipes myself. Thanks also for including your source of your ingredients.     just tried your recipe. yummy! but i only managed 6 cupcakes instead of 12 from the amount you gave. 😛
