This morning, I went to Tesco. It has been a while I go there because now it is too far from my home. I kinda like Tesco for some of it’s things because it is much cheaper than Cold Storage.
For example, Tesco has lots of fresh herbs. When the herbs wilt, they sell it for only 16 sen. Yes, sixteen sen only per pack. At Cold Storage, a pack goes for almost RM3 while Tesco sells a pack for RM1.79.
So, when I see 16 sen packs, I usually buy a pack of each variety. Never mind that I won’t be able to use them all. They can dry in the fridge and still smells good.
With so many types of herbs, I have to find something to do with them. So, I bought four chicken thighs for about RM11. I seasoned the chicken with white wine, fresh lemon, garlic, salt, pepper and lots of majoram, oregano and sage.
Leave the chicken to season for a while.
After that, I pan fry the potatoes with some butter to make it brown. Remove and add the chicken for browning as well. Dump all of them into a baking tray and roast for about 30 minutes.
You may notice some chicken ham on top. Usually, I like to cover roast chicken with either ham, bacon, aluminium foil or banana leaves when I roast them. I only remove the bacon/ham when it is brown. This will make sure the chicken is tender but not too dry. 10 minutes before the chicken is done, I remove the cover, increase the heat to 250 deg celcius to brown the meats.
I found some bruised mushrooms going for 50% discount. I bought a pack of portobello mushrooms and white button mushrooms. Do you know it is really easy to make one of those expensive wild mushroom soup?
What I did was :
Heat some butter and sweat some garlic (don’t burn the garlic)
Cut the mushrooms and stir fry for a while
Add some milk and some evaporated milk
Season to taste
Put the mixture into a blender to blend till smooth. Adjust the consistency with more milk (if too thick) and reheat before serving.
I made a casserole of wild mushrooms soup for only about RM10? It serves six of us. We bought some dinner rolls.
And have this wonderful meal. Oh ya, I also made mango smoothie with some apple mango, sugar, evaporated milk and low fat milk.
