Recipe : Gordon Ramsay and Jamie Oliver wannabe Shepherd Pie

I want to make a Shepherd Pie and found Gordon Ramsay’s recipe for a Shepherd Pie. He used minced lamb. Meanwhile, what I have was a pot of lamb shanks, stewed till tender and the meat separated from the bones.

Put the lamb shank into a baking dish.

Prepare Betty Crocker’s mashed potato with four cheese. (a box with two packets, each four servings cost RM8.90, only available from certain supermarket. Avoid Mr. Mash, it tastes so fake.)

I only have very little lamb shank meat so I boiled three eggs and put them on top of the stew. Then, I cover the top with the mash potatoes.

It is very easy to make because you just need to spread a layer of mashed potatoes on top of the stew/egg. Use a fork and make some criss-cross design. I pour a little olive oil on the top as the potatoes look rather dry.

Bake it for 20 minutes at 200 degree and I got a simply delicious shepherd pie enough for four persons.

For the lamb shank recipe, you can get it from my earlier post. This time, I added some fennel and coriander powder into the stew to give it a spicy tang.

Shepherd pie is really easy to make. You can use minced beef or lamb and stir fry it with lots of onions, garlic, chopped tomatoes (I use Italian canned plum tomatoes) and the finished result is something like a bolognaise sauce. Slather mashed potatoes and bake and you get a really beautiful dish.

I like making this stew/covered with short crust or mash potato dish because my kids love the ‘western’ touch. Moreover, I can keep the left over stew and serve it in other ways, like over pasta or with bread.

Jamie Oliver lamb shank pie

My two older children have heard so much of me talking about Jamie Oliver and saw me constantly holding one of the two Jamie Oliver’s cookbooks I have that they have these jokes amongst themselves.

Well, I really depend on Jamie’s two cookbooks for most of my ideas. Usually, I just thumb through and then, go to the kitchen and try to come up with whatever ingredients I have.

So, how did I do the lamb shank pie? Easy. After I had stewed the lamb shanks according to this recipe for lamb shank, I merely put the lamb shanks into a casserole. I blended the carrots and celery sticks which I used in the stewing to make the gravy thicker. Then, I rub a beaten egg on the surface of the casserole where I want to make sure the pastry sticks to the casserole.

I have a packet of frozen puff pastry and just cut them and criss cross them on top of the lamb shanks. Then, glaze with more eggs and then, bake for 20 minutes at 200 deg celcius or until the puff turned golden brown.

This dish certainly looks more impressive than bringing a pot of lamb shank for serving. What I did was to use a sharp knife and cut the tender meats into pieces and then, gently pulled out the large bones. So, the pie remains intact with smaller pieces of lamb underneath. Moreover, the puff pastry nicely soaked up the gravy and it is delicious.

So, all hail Jamie, my new idol.

Jamie Oliver doughnuts - Lemony, zesty and orangey

I have posted the recipe for doughnuts which I copied from Jamie Oliver’s book. So, I shall not repeat the recipe again. What I did was to add the peel of one lemon and two oranges into the dough.

Then, I made a thick sugar syrup with the juice of one lemon and icing sugar. Dip the freshly fried donuts into the syrup and I got the most delicious doughnuts.

However, it isn’t the doughnuts that taste good. My kids had so much fun cutting the doughnuts and shaping them.

The orange and lemon peels give the donuts a very balanced taste because doughnuts are usually very oily. The citrusy fragrance made you want to wallop all of them.

Trust me, it is very easy to make doughnuts. Just make sure that the yeast you prepare froth nicely and you cannot go wrong with it. I got a very big batch of donuts with just 500 grams of flour.
