Recipe : Kylie Kwong inspired fish soup

Few days ago, I bought a huge fish meant for steaming. Upon reaching home, I realised that my fish is too big for the steamer. I wasn’t keen on chopping it into two pieces as it won’t look nice then.

Then, I happened to watch Kylie Kwong on Discovery Travel & Living. She also had a huge fish which she filleted the flesh and cook the bones separately.

I will leave out the steaming fish part because I didn’t manage to get a photo. So, this will be the Kylie Kwong inspired fish soup.

What she did was to use the fish bones and make stock with it. I used onion, garlic, roots of the coriander, Chinese cabbage, pepper, ginger and salt. I also added a few dash of Chinese rice wine and fish sauce for the extra oomph.

The not so nice looking pot of fish head and bones. I strained the soup because I do not want to risk getting bones in them.

After I got a nice, sweet and flavourful soup, I added some Hongkong choy sum and lots of coriander leaves.

To fill the stomach, I added in mung bean noodles (tang hoon).

As the fish is no longer nice to eat as it is rather dry and tasteless, I bought some fish balls. The white ones are made from eel and the grayish is from ‘sai toe’ or ikan parang fish. I dunno what it is called in English. The little teddy bears ones are for the kids. Well, fish ball is NOT a healthy food for kiddies as it contains lots of MSG and additives to make the balls springy and bouncy. So, whenever possible, make your own or avoid feeding the children with fishballs on a regular basis. (I know most grandmas like to do this.) It is also a choking hazard so always cut them into tiny pieces for the smaller children. (gee, I do nag, don’t I?)

  1. Fish with “chau chai” (plus ginger and Foochow red wine)is nice! Dunno if u can get the pickled vege there! Something like salted vege with that red stuff (the residue from making Foochow red wine)! Typical Foochow dish!
