Pandan kaya cake is actually layers of sponge cake with kaya and pandan jelly. It is not something I know how to bake. Just looking at the layers is intimidating. The other thing is to get the right lemak taste of the pandan jelly which comes from coconut milk and the sweetness of the kaya which shouldn’t cause the sponge cake to be too sweet.
The other thing is I do not know how they can pour the jelly over the cake without getting the cake soggy. So, I have always depended on Maxim cakes for pandan jelly cake. I have tried other cake shops version but I still prefer Maxim’s.
A slab is about RM9 (or something). It must be stored in the fridge and eaten as soon as possible as the cake can go bad really fast.
